Distillation
The White wine's double distillation process in stills from Charente gives
the Cognac's "eau-de-vie". Distillation is a tricky operation which requires
all our attention in order to obtain good "eaux-de-vie".
The Ageing Process
First Collected in big casks, the "eau-de-vie" is subsequently stocked in
barrels in which the necessary exchange between the oak wood and the alcohol
takes place.
This long exchange gives Cognac.
Cognac develops organoleptic characteristics, as rancio, which will make the
blending
process possiblee.
Blending
The mixing process gives a precise quality of Cognac: VSOP, Napoleon, XO...
The Cognac which is obtained is 40 proof and can then be bottled.
Bottling
This process is very carefully done through its different stages: filling,
sealing, labelling, packaging...
